WINTER WARM BEET SOUP
Ingredients:
2 TBSP of sesame or Coconut oil
1 large yellow onion chopped
salt to taste Himalayan
Black pepper to taste
3 cloves of garlic chopped!
4 large carrots sliced
2 tsp dried fennel or fennel seeds
1 tsp fenugreek powder
1 TBSP dill leaves
I square of Kombu, cut in 4 pieces
t tsp asafoetida (hing, you can get this at Indian market or online from Amazon)
4 medium beets chopped
beet greens chopped
i bunch of lacinato kale or chard chopped
1 qt of organic vegetable broth
Prepare
In large pot saute the onions till golden with salt and pepper. Then add garlic and sauté some
more. Add the fennel and hing, and all veggies, kombu and broth. Bring to a boil and then simmer for
one hour on low ten, stirring occasionally till the beets are tender.
